A weekly selection of special dishes from the kitchen of HOB Chef Jake Richardson
A taste of the Middle East comes to the Old Pueblo. Descending from qadb, an edible herb which has been cultivated in the Bekka Valley of Lebanon and Syria as far back as 3,000 B.C., Tabbouleh is a delicious and health-conscious salad centered around bulgur wheat, that features prominently in the Arabic diet.
Traditionally composed of bulgur, parsley, tomatoes, bell peppers, olive oil, and lemon juice; our chef takes this classic recipe through the desert dust and inchoate rumblings of hatch chili season to add a unique Tucson flavor of red beans, Pico de gallo, and sweet peppers.
"Tucson Tabbouleh" will be featured Wednesday through Saturday, starting August 3rd, and expiring like a monsoon over the mountain thereafter. Special pricing available from your server or bartender.
